Serves 6
Prep time: 20 minutes

Ingredients:

2 tomatoes, chopped
4 tbsp. oil
1 2 oz. can Spanish olives, sliced
1 2 oz. can green chili
1 lb. Cheddar cheese, shredded
1 medium onion, chopped
2 tbsp. tarragon vinegar
8-10 English muffins

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together.
  3. Spread mixture on English muffin half.
  4. Place on baking sheet.
  5. Bake for 10-12 minutes or until golden brown and bubbling.
  6. Serve warm
