Strawberry French Toast

Makes 8 servings.

8 slices French bread, cut 1 1/2" thick
5 eggs
3/4 cup milk
1 teaspoon vanilla extract
5 cups loose pack frozen strawberries
2/3 cup sugar
1/2 teaspoon cinnamon

Combine eggs, milk & vanilla. Dip each piece of bread intp egg mix for about 30 seconds on each side. Place bread slices on a baking sheet and let stand for about 10 minutes to absorb the egg.

Grease a 13x9x2" glass baking dish. Spread frozen berries evenly over bottom of dish. In a small bowl, combine sugar & cinnamon and sprinkle 1/2 cup of this mixture over the berries. Using a spatula, carefully place bread slices over the berries. Sprinkle the remaining sugar on top of the bread. Bake at 450 degrees for about 15 minutes or until the bread is golden brown.

To serve, use a spatula to place bread on a plate, then spoon some berries and syrup on top.
