Email to a Friend Printer Friendly Version

Submitted by Sheba Rodican from Hamden, Ct.

Dry Mix:
3 cups cooked rice (preferably day before)
2 clove garlic crushed
1 medium size onion cubed
1/3 can pineapple cubed
1/2 cup frozen mixed vegetable
1/2 cup morning star meatless (ground beef substitute)

Liquid Mix:
2 tablespoon vegetable or peanut oil
2 tablespoon peanut butter
5 tablespoon tomato sauce
Sprinkle any type of seasonings eg. Adobo or Italian
A dash of crushed pepper
To taste salt and pepper

Sautee the liquid mix for 3 minutes, now add garlic and onion. When onion becomes soft/transparent, add meatless (meat) and rice. Now stir for a few minutes. Then put the lid on the pan for 6-7minutes until rice is evenly mixed. Lastly add mixed veggies and pineapple for another few stirs. Put lid back on, leave it for 5 minutes and viola!!! Chopped cilantro works for presentation before serving. Serves 4.
