Easy Guilt-free Sour Cream Chicken
Email to a Friend Printer Friendly Version

Recipe shared by Aaron Persen of Iowa.

1 can Campbell's
98% Fat Free Cream of Chicken Soup
1 cup Fat Free SourCream
1 cup shredded Swiss Cheese (or another cheese on hand - preferably a sharp cheese like cheddar)
1 teaspoon Worchestershire Sauce
1 Tablespoon Dill Weed
1 teaspoon dry mustard
Salt, to taste
Pepper, to taste

Combine the above ingredients and spread over 4-6 chicken breasts. Bake at 375 degrees for 30 minutes - or until chicken breasts are fully cooked.

Comments from Aaron:
I'm a 24 year old college student - and this recipe is a variation on a dish my mother used to make. When I found out I had high cholesterol, I decided I needed to reevaluate the ingredients. Experimenting with the dish, I also found that a little dill and mustard really bring out the flavor of the chicken. I've made made this chicken dish for both friends (who always ask for "seconds") and I've made it just for myself...because it reheats so well. This easy dish is rich and full of flavor (but with the right ingredients - low fat soup, low fat cheese, and fat free sour cream - there's little to feel guilty about). Serve with mashed potatoes, using the sauce as a gravy.
