Apricot Sweet Potatoes

4-5 fresh sweet potatoes
1 cup brown sugar
1 1/2 Tbsp corn starch
1 cup apricot nectar
2 tsp grated orange peel
1/2 cup hot water
1/8 tsp cinnamon
1/4 tsp salt
1/2 cup dried apricots, chopped
2 Tbsp butter
1/2 cup pecans
marshmallows
Clean, slice in chunks and slightly pre-boil sweet potatoes. Bring the rest of the ingredients (excluding butter, pecans and marshmallows) to a full boil, stirring constantly. Remove from heat when thick. Add 2 Tbsp butter and 1/2 cup pecans. Pour over potatoes.
Bake for 35 minutes at 350 oven. Top with marshmallows.
