Holiday Spanish Clementine Salsa

This vibrant, tangy fruit salsa is perfect paired with roasted poultry orfish. Clementines are only available during the holidays and make anexcellent holiday snack.

4 clementines (peeled and chopped)
1/2 small red onion (diced)
1 small jalapeno pepper (seeds removed and minced)
2 teaspoons chopped fresh cilantro
1 tablespoon fresh lime juice
1 teaspoon extra virgin olive oil
1 teaspoon honey

Combine the clementines, red onion, jalapeno and cilantro in medium bowl. Separately, whisk the lime juice, oil and honey.  Stir into the clementinemixture.  Makes 4 servings, about 1/3 cup each.
