Lemon Soy Grilled Vegetables
2 zucchini
1 red pepper
1 yellow pepper
2 yellow squash
1 small red onion
� cup sesame oil
� cup soy sauce
� cup fresh lemon juice
2 tsp fresh ginger, peeled and finely chopped
2 cloves of garlic, minced
Chop vegetables into large pieces. Whisk together oil, soy, lemon, ginger, and garlic. Pour over vegetables. Cover and refrigerate, marinating for at least 2 hours. Remove vegetables from marinade and grill 10-15 minutes until tender.
