Old Fashioned Potato Candy
Recipe submitted by Patty Hudson of Frankfort, Kentucky.
1 potato, cooked and mashed
1 stick margarine, softened
Confectioners sugar (2-3 pounds)
Peanut Butter (Creamy)
Combine cooked potato and margarine in mixing bowl. Mix well. Begin adding confectioners sugar to form a dough.
Roll out on Confectioners Sugared surface until thin. Spread with peanut butter. Begin rolling from side closest to you. Wrap in waxed paper and chill overnight. Slice to desired thickness. For best results keep refrigerated.
